I am not sure of you, but I frequently go mad a rut of defaulting to a similar meats and vegetables meal after meal.

Lately, it’s been all chicken as well as the occasional shrimp including a side salad. For veggies, I use plenty of broccoli and Brussels sprouts, spinach and mushrooms.

I like it, but… pretty soon everything starts looking the same.

So when it struck me that I may make kielbasa and cabbage, I was wayyy more excited than the usual normal person should be.

Cabbage! I love cabbage — nevertheless, I hadn’t made it in ages!

Also, it’s pretty cheap, and it can make a ton! It’s as if it triples bigger when you cut it up (and then reduces back to its original volume or smaller after you cook it, but it is still lots!).

Lots of people of kielbasa and cabbage is nothing new. It’s a regular Polish combination and you can likely a thousand recipes because of it throughout the Internet. And rightly so! It’s an incredible quick, easy, and cheap comfort food meal.

It’s rich in smokey sausage and buttery cabbage – with only a touch of brown sugar to counterbalance the bitterness which can be characteristic of the vegetable.

I assumed it will go properly by egg noodles (I was right!) when you’re endeavoring to low-carb it, just leave them out and it’ll still often be a filling meal.

After we first gave it an idea Mike thought it needed a bit something. We tried adding paprika and thyme, but neither addition quite tasted right. All it appeared needing was merely another pinch of salt. So, if uncertain, add pepper and salt to taste! I also believe it will be good with a dash of apple cider vinegar.

Another plus due to this meal is that it makes enough for 4-6 servings, and that means you can make it Sunday or Monday and consume the leftovers for lunch all week! It keeps very well as well as doesn’t lose quality as leftovers.

Causeing the kielbasa and cabbage with egg noodles made me want to cook other cabbage dishes too: corned beef and cabbage, unstuffed cabbage roll soup, Asian cabbage slaw… It might become the new vegetable on the hour for me.

That’s good. It’ll give Brussels sprouts a break. I realize, I realize, they’re cousins anyway, but cooking them feels (and tastes) very different.

  • 1 medium onion diced
  • 1 tbsp olive oil
  • 12 oz kielbasa sliced diagonally
  • 1 small head green cabbage shredded or chopped
  • 2 tbsp brown sugar
  • 2 tbsp butter
  • 8 oz egg noodles
  • 1/2-1 tsp kosher salt to taste
  • 1/2-1 tsp pepper to taste
