Oven Baked Bacon Wrapped Chicken Tenders – This recipe is a lesson in frugality, ingenuity or being able to adapt.  I desired to grill bacon wrapped scallops for Independence Day, knowing scallops will be available at our local Fresh Market.  But then we were without power for 5 days that week following bad weather that left the Virginia (and other areas) in a state of emergency.
After we returned to our home and some kind of normalcy, scallops were no longer available and were $15.99 a pound.  Well, one pound of scallops would seriously wreak havoc on my budget.  So, while with the food market, I brainstormed what I could truthfully do instead, employing the same marinade ingredients with basics of extra virgin olive oil and lemon juice.

While they are a far cry from scallops, chicken tenders would also be smart with my base ingredients.  Plus i got lucky that 3 pound bags of chicken tenders were available for 20% off.  So instead of coughing up $16 one pound for scallops, I paid a little bit over $2.50 one pound for that tenders.  My hubby and I seriously liked these, and we’re certain the 7 year old could have liked them too.  I’ll have to you should make these again when he’s here to relish them.

A pound of chicken tenders turned out to be 8 tenders for us.  The fennel fronds are optional.  While I could truthfully detect their aroma, I do not think it’s worth purchasing a full fennel bulb just for that little bit of fennel fronds my recipe calls for.

Ingredients :

  • 4 skinless, boneless chicken thighs
  • 1/4 teaspoon freshly ground pepper
  • 4 slices of bacon

Directions :

  1. Preheat the oven to 425°. Line a baking sheet with parchment paper.
  2. Season the chicken thighs with freshly ground pepper. Wrap 1 piece of bacon around each of the chicken thighs, tucking the ends under the thigh to hold the bacon in place. Place the wrapped chicken on the prepared baking sheet.
  3. Bake the chicken in the preheated oven for 25 to 35 minutes, or until the bacon is crispy and the chicken registers 165° on an instant-read thermometer.
